Cooking with Lynn: using veggies as a thickener - 47abc
Oct 14, 2024
WMDT – It’s Thursday and that means we are back in Lynn Matava’s kitchen.
Lynn is a Nutrition Educator with the University of Maryland Extension.
If you’re looking for a way to thicken your gravy, soup, or stew – then Lynn has the perfect alternative for you.
Lynn says that fiber can be used to thicken just about anything, and tons of veggies are packed full of it such as pumpkin, squash, peppers, or cauliflower.
She says this is commonly done with Chili!
Lynn does warn not to allow the veggies to get too hot in the blender as they will form a seal.
